Have a happy holiday weekend... goodness knows I can use the extra day of rest!
~ Fat Chick August 23 Cooking... Hey! I didn't know I could do that!The ironic this is I’ve always been a fan of cooking. I even flirted with the idea of going into the culinary of arts after high school but in a weird twist of fate my ex-best friend ruined that one for me (another story for another day). But yet every time I make a scrumptious meal I am surprised with myself.
For instance, I made the suggestion that My Prince and I start eating more meals at my place on the weekends instead of spending so much money (and calories) eating out. So, I pulled out my low-fat/low-cal cookbook and got to work.
On Tuesday night I made Apricot Chicken, home made mashed potatoes, peas, and a low-fat chocolate dessert served with a side of light ice cream. All during the meal My Prince complimented me on a job well done. I thoroughly enjoyed each bite as well and was surprised at the low-fat/low-cal meal itself. Isn’t it fun to surprise yourself? Hehe!
The Apricot Chicken is an easy recipe and I’ve made it in the past it’s just been such a long time since I’ve had it that it was like tasting it all over again for the first time. The recipe for this is:
1 package of dried onion soup (I use Lipton)
1 18oz bottle of Catalina Fat Free dressing (light works just as well if you don’t like the taste of the FF)
1 16oz jar of Apricot jelly (I used Natural Fruit Sugar Free or something like that)
1 pound of chicken breasts
Preheat oven to 350 degrees. Mix together onion soup, Catalina dressing, and jelly in a casserole dish. Add chicken and cook uncovered for 50 – 60 minutes.
That’s all there is to it. It’s fast, easy, and tastes great! I’ll have to post the chocolate dessert recipe another time, as I don’t have that one memorized.
Somehow in the mix of all of this I came up with the idea to have My Prince’s parents over for dinner this weekend. I don’t know what I was thinking, lol. Actually, I know exactly what I was thinking. My Prince’s Mom has made the comment, “Gee, we haven’t been invited over for dinner in a long time Chick.” Several times in the past few weekends so since I enjoyed the meal I cooked so much on Tuesday I decided to cook again on Saturday.
The meal I have planned isn’t as healthy as the one on Tuesday but I have two motives with dinner on Saturday. The first being I have a box of filet mignon that I need to use up and second to get in a dinner invite to the Prince’s ‘rents. I will be making the filet, portabella mushrooms, green beans, and the chocolate dessert that I made on Tuesday. Wish me luck that everything goes well!

P.S. After looking through the Rachael Ray cookbook I decided to return it. It didn’t have a lot of recipes that I liked. Maybe I’ll type up a review on it!
P.P.S. My career idea (that I have yet to share on here) is sticking. I’m even trying to enroll in a class at my local community college to see if this idea is something I should continue to pursue, which could end up being a very good possibility.
August 20 County Fair, Rodeo Shows, and Rain with some books too!This past weekend was full of new experiences and getting things done. It started out with the county fair on Friday night. I saw cows, horses, donkeys, bunnies, goats, and sheep! I had a good ol’ fair hamburger and cheese fries while My Prince inhaled a gyro.
The most interesting part of the fair was watching goats being auctioned off for dollars by the pound. After seeing all of these cute little guys get new owners I couldn’t help but wonder what all of these people were going to do with these goats. Last year My Prince’s Dad had bid on a goat in an arrangement to drill on the farmer’s land in exchange for the goat. My Prince’s Dad put the bid on the goat but graciously allowed the farmer’s daughter to keep the goat. Fine, that was a business deal. But what about all of the other goats? Do I really want to know?
On Saturday, I put on my “Thank God For Cowboys” shirt and my cowgirl hat and headed off to the rodeo. I’ve never been to a rodeo so I was excited and skeptical at the same time. Let me just say that it. was. awesome! I saw cowgirls riding horses, a horse whisperer show off his horse ‘Justin Boots’, and bull riding. I can’t wait to do it again next year!
Unfortunately, on Sunday the rain came. I thought this was a good day for My Prince and I to do our grocery shopping and my dirty laundry. I also thought it was a good day to hit the library and Borders bookstore.
I went to the library hoping to find the book “30-Minute Get Real Meals: Eat Healthy Without Going to Extremes” because I did look it up on the Internet and my library supposedly had a copy. When I got there I was told it had been checked out. So, I figured I’d go to Borders and pick it up, try a few recipes, and if I didn’t like it I’d take it back. So, I did get that cookbook and another impulse buy. The other book I picked up is the first in a series. It is called Twilight and I started the first few pages of the first chapter (to decided whether or not to get it) when My Prince paged me to let me know he was on his way to pick me up from the bookstore (he went to go get gas while I indulged in my nasty little obsession of books, lol). I do hope it was worth the impulse.
I also bought myself a 2008 Harry Potter calendar. Go on… I know you’re jealous! Hehe! Did I mention that I bought all of this with my fabulous birthday gift card from My Prince’s Mom and Dad? No? Oops! Yep, it was all for me for my birthday. Ah… it just doesn’t get any better than that!
Speaking of books (as if I couldn’t go on forever), I am currently reading my co-worker’s sister’s first ever-published book, “Someone From Heaven”. It’s a 231-page book so I should get through it rather quickly. Take a peek at my book list for this month. I’ve definitely read quite the mixture so far. My Prince has started to worry about me because I told him I felt ‘weird’ not reading two books at one time like I’ve been doing for the past month. I’m starting to think he might sign me up for a help outreach program, lol.

Have a great week! ~ Fat Chick August 06 ExerciseYep, there’s that scary word again. This time I’m trying to make the most of my time. For instance, I have a lot of spare time during my “workday”. I put that in quotes because to me my workday begins the minute I step off the bus and onto the downtown streets.
When summer arrived this year so did a bunch of bus schedule changes and eliminations. So, now I get to downtown 50 mins. before I need to start working and I get off work a whole half an hour before the first bus is available to take me home.
In the beginning I used this spare time to read because I have a problem and need to have my reading fix every day, lol. Well, instead of sitting around all day long I decided to start using that time for exercise instead of just reading. Every morning I now walk for 25-35mins. when the bus drops me off, in the afternoon on my lunch break I walk for 30mins., and finally while I’m waiting for the bus to take me home I walk for 30-mins. I like this routine because not only am I exercising throughout the day I don’t have to worry about waking up earlier or finding time to do it when I get home from work.
I know… I’m brilliant ;).
Now that I’ve been doing this for two weeks I’m considering jogging during my lunch break to kick it up a notch. We’ll see what happens though, lol.
